Grand Dumpling Filling Ingredients- 1.2kg Ground Pork
- 1 Tbsp Minced Garlic
- A pinch of Salt
- A pinch of Black Pepper
- 2 Stalks Green Onion
- 1 bag Bean Sprouts
- 1 block Firm Tofu
- Generous amount of Well-fermented Kimchi
- 2 Eggs
- Plenty of Large Dumpling Wrappers
Cooking Instructions
Step 1
Begin by preparing a generous 1.2kg of ground pork, which will form the base of our hearty dumpling filling. Using fresh, good-quality pork will significantly enhance the flavor.
Step 2
Heat a pan over medium-high heat and add the ground pork. Cook, breaking it up with a spoon, until it’s no longer pink. Carefully drain off any excess fat using paper towels. This step ensures the dumpling filling is delicious and not greasy.
Step 3
Finely chop 2 stalks of green onion. The subtle sharpness of the green onion will complement the richness of the pork and add a wonderful aroma to the dumplings.
Step 4
Briefly blanch 1 bag of bean sprouts in boiling water, then immediately plunge them into cold water to stop the cooking. Drain them thoroughly, squeeze out excess water, and chop them finely. The crunchy texture of the bean sprouts adds another delightful layer to the filling.
Step 5
Crumble 1 block of firm tofu using a fork or your hands. It’s crucial to squeeze out as much water as possible from the tofu, using a cheesecloth or paper towels. Excess moisture can make the filling soggy.
Step 6
Finely chop a generous amount of well-fermented kimchi. Squeeze out any excess liquid from the kimchi until it’s quite dry. This ensures the filling is well-seasoned and maintains a pleasant texture when eaten.
Step 7
Crack 2 eggs into a large bowl. The eggs act as a binder, helping to hold all the filling ingredients together smoothly.
Step 8
Combine the cooked pork, minced garlic, salt, pepper, chopped green onion, blanched bean sprouts, squeezed tofu, drained kimchi, and eggs in a large mixing bowl. Mix everything thoroughly, kneading gently, until all the ingredients are well incorporated and the seasoning is evenly distributed. This creates our delicious dumpling filling!
Step 9
Prepare your large dumpling wrappers, designed for ‘Wangmandu’. Now, it’s time to start shaping our dumplings with care. Using wrappers that aren’t too thin will make them easier to fold and less prone to tearing.
Step 10
Place a generous amount of the prepared filling onto each wrapper. Don’t be shy with the filling; a well-stuffed dumpling offers a much more satisfying bite.
Step 11
Congratulations! Your first batch of grand New Year dumplings for 2024 is complete! They look wonderfully substantial and delicious, don’t they?
Step 12
Gather your loved ones, share stories, and enjoy the process of making these dumplings together. Focus your energy and create these delightful parcels of joy.
Step 13
Fill a steamer pot with water and bring it to a rolling boil over high heat. Ensure there’s enough water to create plenty of steam.
Step 14
Arrange the dumplings in the steaming basket, ensuring they don’t touch each other. Place the basket over the boiling water, cover tightly, and steam for about 10-15 minutes. Adjust the steaming time based on the size of your dumplings.
Step 15
While the dumplings are steaming, prepare a tasty dipping sauce. Mix soy sauce, vinegar, a touch of sugar, and a little water. You can add a pinch of chili flakes or a drizzle of sesame oil for extra flavor, if desired.
Step 16
Behold! Your magnificent 2024 New Year’s King Dumplings, made with abundant ingredients and crafted with care, are finally ready!
