We’ve combined the pickled onions I made last year with fragrant stone parsley, bursting with spring’s essence. This salad offers a delightful balance of refreshing and tangy flavors, making it a perfect side dish or appetizer.
Main Ingredients- 200g fresh stone parsley (also known as Sedum sarmentosum)
- 1 pickled onion (adjust to taste and size)
- 1/4 carrot
- 1 tsp toasted sesame seeds
- 1/4 onion
Dressing- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp pickled onion brine
- 1 Tbsp vinegar
- 1 Tbsp sugar
- 5cm segment of green onion (scallion)

Cooking Instructions
Step 1
First, thoroughly wash the fresh stone parsley under running water to remove any dirt or debris. Gently shake off excess water and set aside. Wash the carrot well.
Step 2
Drain the pickled onion slightly and slice it into bite-sized pieces. Thinly julienne the carrot and the fresh onion. Keeping these separate for now is helpful.
Step 3
Let’s prepare the delicious dressing. In a bowl, combine 1 Tbsp of pickled onion brine, 1 Tbsp of gochujang, 1 Tbsp of plum extract, 1 Tbsp of vinegar, and 1 Tbsp of sugar. Mix well until thoroughly combined. You can adjust the sweetness and tanginess by modifying the sugar and vinegar amounts to your preference. Finely chop the green onion and add it to the dressing for extra aroma.
Step 4
Place the washed stone parsley in a mixing bowl. Artfully arrange the sliced pickled onion, julienned fresh onion, and carrot on top. Spoon the prepared dressing over the ingredients. Gently toss everything together with your hands; be careful not to overmix, as this can bruise the delicate stone parsley. The key is a gentle hand! Finally, sprinkle with toasted sesame seeds for a nutty finish. Your vibrant and flavorful pickled onion and stone parsley salad is ready!
