Main Ingredients- 250g Buckwheat Noodles (Naengmyeon Sari) (1-2 servings)
- A pinch of dried seaweed flakes (Gim-garu), to taste
Seasoning- 2 Tbsp Soy Sauce
- 3 Tbsp Perilla Oil
- 1 Tbsp Sugar
- 1 Tbsp Minced Garlic
- 2 Tbsp Toasted Sesame Seeds (ground)
- 2 Tbsp Soy Sauce
- 3 Tbsp Perilla Oil
- 1 Tbsp Sugar
- 1 Tbsp Minced Garlic
- 2 Tbsp Toasted Sesame Seeds (ground)
Cooking Instructions
Step 1
First, let’s prepare the delicious seasoning sauce that will make these noodles shine. In a wide bowl, combine 2 tablespoons of soy sauce, 3 tablespoons of perilla oil, 1 tablespoon of sugar, and 1 tablespoon of minced garlic. Whisk everything together until well combined. Having the sauce ready beforehand will make tossing the noodles much easier later.
Step 2
For an even richer nutty flavor, we highly recommend grinding your own toasted sesame seeds. You can use a blender or a mortar and pestle to grind the seeds into a fine powder. Freshly ground sesame seeds add a significantly more robust aroma and flavor, elevating the overall taste of your makguksu.
Step 3
Now, it’s time to cook the noodles. Bring a pot of water to a rolling boil and add the buckwheat noodles. Cook for exactly 1 minute. Be careful not to overcook them, as they can become mushy. Immediately drain the cooked noodles and rinse them thoroughly under cold running water to remove excess starch and cool them down. Drain them well in a colander.
Step 4
Place the well-drained noodles into the bowl with the prepared seasoning sauce. Add the freshly ground sesame seeds. Gently toss the noodles with the sauce and sesame seeds until every strand is evenly coated. Finally, garnish generously with dried seaweed flakes. Your delicious and refreshing Deulgireum Makguksu is ready to enjoy! Feel free to add sliced cucumber or a hard-boiled egg for extra enjoyment.
