Cooking Instructions
Step 1
Peel the skin off the blanched colt’s foot and cut it into manageable lengths. Then, julienne it thinly so it’s well-suited for stir-frying.
Step 2
Julienne the vibrant red and yellow bell peppers and the onion to a similar thickness as the colt’s foot. Slice the green onion into thin strips, using both the white and green parts.
Step 3
Finely chop the beef brisket into bite-sized pieces. Marinate it with a little of the seasoning (Korean soy sauce, cooking wine, fish sauce, minced garlic) and let it rest for a short while to absorb the flavors.
Step 4
Gently massage the julienned colt’s foot with the same marinade ingredients used for the beef. This step helps to enhance the natural flavor of the colt’s foot.
Step 5
Heat 1 tablespoon of cooking oil in a pan over medium-high heat. Add the marinated beef brisket and stir-fry quickly until it’s nicely browned. Remove the beef from the pan and set aside.
Step 6
Add another tablespoon of cooking oil to the same pan. Add the prepared colt’s foot and stir-fry over medium heat until it becomes tender and pliable.
Step 7
Once the colt’s foot is tender, add the julienned onions and green onions to the pan. Sprinkle in a pinch of roasted salt and continue to stir-fry until all the vegetables are well combined.
Step 8
Add the red and yellow bell peppers to the pan and stir-fry briefly. Bell peppers cook quickly, so avoid overcooking to maintain their crisp texture. Add another pinch of salt to adjust the seasoning.
Step 9
When all the ingredients are nicely stir-fried, pour the prepared starch slurry around the edges of the pan. Stir continuously for another moment until the sauce thickens and coats the ingredients. Then, turn off the heat.
Step 10
Finally, drizzle in 1 tablespoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds. Mix well to distribute the nutty aroma and flavor. (You can add a little more sesame oil here if you like.)
Step 11
Your delicious and visually appealing Colt’s Foot Stir-Fry with Beef Brisket is now ready! Enjoy this unique dish that combines the crispness of colt’s foot with the savory richness of beef brisket.
