Sweet Potato Soup Ingredients- 2-3 Korean sweet potatoes (approx. 350-400g), Korean varieties like ‘Bambam’ are recommended for their sweetness and creamy texture.
- 1/3 onion, finely sliced, to add depth of flavor to the soup.
- 2 cups + 1/2 cup milk (500ml + 125ml), adjust for desired soup consistency.
- 1 Tbsp unsalted butter, for sautéing the onions.
- 1 slice cheddar cheese, for a rich, cheesy flavor.
- 1 Tbsp grated Parmesan cheese, for an extra umami boost.
- Pinch of black pepper, to finish and enhance the aroma.
Cooking Instructions
Step 1
First, prepare the star ingredient: the sweet potatoes. You can steam, boil, or roast them until they are completely tender. Once cooked, let them cool slightly before peeling. Ensure they are soft enough to mash easily.
Step 2
Thinly slice the 1/3 onion. Slicing it thinly will help it cook down and blend smoothly into the soup, enhancing its flavor.
Step 3
Melt 1 Tbsp of butter in a pot or pan over medium-low heat. Add the sliced onions and sauté for about 3 minutes, or until they become translucent and softened. Be careful not to burn them. Sautéing the onions brings out their natural sweetness.
Step 4
Add the peeled and cooked sweet potatoes to the pan with the sautéed onions. Mash the sweet potatoes thoroughly using a spoon or fork until there are no large lumps. It’s important to turn off the heat at this stage to prevent the sweet potatoes from sticking or burning to the bottom of the pan. Let the mashed mixture cool down for a bit.
Step 5
Pour in 2 cups (500ml) of milk, followed by an additional 1/2 cup (125ml) of milk into the pot with the mashed sweet potato and onion mixture. This totals 2.5 cups of milk.
Step 6
Now it’s time to blend everything until smooth. Use an immersion blender (hand blender) or transfer the mixture to a standing blender. If using an immersion blender, be cautious as the soup can splash out, especially if your pot is shallow. To minimize splashing, tilt the pot and blend the ingredients on one side. Blend until the soup is completely smooth and creamy, with no lumps remaining.
Step 7
Return the blended soup to the pot and place it over medium-low heat. Stir continuously for about 3 minutes. Constant stirring is crucial to prevent the soup from sticking to the bottom and splattering. Use a wooden spoon or spatula to scrape the bottom of the pot as you stir.
Step 8
Once the soup is heated through, add 1 slice of cheddar cheese and 1 Tbsp of grated Parmesan cheese. Stir gently until the cheese is fully melted, which should take about 2 minutes. Taste the soup and adjust seasoning as needed. You can add a pinch of salt if desired, though the cheese often provides enough saltiness. Finish with a grind of black pepper for extra aroma. (Note: You can omit the cheese and use salt for seasoning, or skip the pepper altogether, based on your preference.)
Step 9
Your warm, delicious, and creamy sweet potato soup is now ready to be enjoyed! 🥣
