You must have received some precious dried yellow corvina (gulbi) as a gift this holiday season! Normally, I would pan-fry it, but during the busy holiday festivities, I decided to try oven baking. I prepped the gulbi, placed it in an oven-safe dish, refrigerated it, and then simply put it in the oven at the calculated time. It was incredibly convenient! The oven bakes it to a delightful crispness on the outside while keeping the inside tender and moist, making it a perfect side dish for rice.

First, let’s prepare the dried yellow corvina. Gulbi often comes packed in a case with multiple fish. It’s a good idea to separate them, wrap each one individually in plastic wrap, and store them frozen. This way, you can easily access and cook one whenever you need.

Take out 4 pieces of the gulbi you plan to cook and let them sit at room temperature for a while to thaw. Leave them at room temperature for about 30 minutes so they can reach a more even temperature. This helps them cook evenly in the oven.

Now, it’s time to remove the fins from the gulbi. Fins can become tough or burn easily during cooking, so it’s best to trim them off neatly.

Locate and carefully cut off the tail fin, dorsal fin, pectoral fin (next to the gills), anal fin, and ventral fin. Use kitchen scissors to trim away this basic set of fins. A clean trim is key.

Next, use the back of a knife to scrape off the scales. The scales on dried yellow corvina can be quite firm and may flake off. Instead of applying excessive force, gently scrape as if you are brushing them off. Remember to scrape in the opposite direction of the scales for effective removal.

After removing the fins and scales, make shallow cuts on the 4 prepared pieces of gulbi. Making these cuts helps the fish cook more evenly in the oven and makes it look more appealing when done. Aim for cuts about 2-3 cm apart.

Now, coat your hands with about 3 tablespoons of sesame oil and rub it evenly over both sides of the gulbi. Applying sesame oil helps eliminate any fishy odors, adds a rich flavor, and contributes to a crispier skin when baked in the oven. Once the sesame oil is nicely applied, the preparation of the gulbi is complete! Place them in an oven-safe dish, cover, and refrigerate. Take them out about 30 minutes before you plan to cook them.

Before you put the gulbi in, preheat your oven. Set the oven temperature to 190°C (375°F) and the cooking time to 25 minutes. Please note that you may need to adjust the temperature and time depending on your specific oven model.

After approximately 25 minutes, the gulbi taken from the oven will be beautifully golden brown and perfectly cooked. Enjoy your delicious meal with this crispy on the outside and tender on the inside baked dried yellow corvina!
