As the weather turns cooler with crisp mornings and evenings, warm, comforting dishes come to mind. Let’s make a simple yet incredibly flavorful vegetable broth that will elevate your soups and stews. This versatile broth is the foundation for countless delicious vegetarian meals.
Vegetable Broth Ingredients- Dried Kelp (Kombu): 5 pieces, palm-sized (wiped clean)
- Dried Shiitake Mushrooms: 4 pieces (soaked in warm water)
- Onion: 1 whole (using the peel adds beautiful color and depth)
- Onion Peels: About 1/4 of an onion’s worth (washed thoroughly)
- Leeks: 2 stalks (focus on the white and light green parts, washed well)
- Daikon Radish: 1/4 of a medium radish (can be used with peel on)
- Dried Red Chilies: 4 pieces (seeds removed for a cleaner taste)
- Dried Shiitake Soaking Water: 1 handful (or Dried Red Chilies: 1 handful)
- Water: 3L (plenty to cover ingredients)
Cooking Instructions
Step 1
First, prepare the kelp and dried shiitake mushrooms. Gently wipe the surface of the kelp with a dry cloth to remove any powdery residue. Soak the dried shiitake mushrooms in lukewarm water for about 30 minutes until softened. Don’t discard the soaking liquid; we’ll use it too.
Step 2
Now, place all the washed vegetable ingredients (onion, onion peels, leeks, daikon radish), the prepared kelp, soaked shiitake mushrooms, and dried red chilies into a large pot. Add the generous 3L of water, ensuring all ingredients are submerged.
Step 3
Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer for approximately 20 minutes. This allows the flavors to infuse beautifully into the water. Be careful not to over-simmer, as it might develop a bitter taste.
Step 4
After 20 minutes, turn off the heat completely. Let the broth cool down in the pot. Straining while it’s still hot can lead to more sediment in your broth, so allowing it to cool significantly is key for a clearer result.
Step 5
Once the broth has cooled sufficiently, carefully strain it through a fine-mesh sieve or cheesecloth into a clean container. You now have a clear, deeply flavorful vegetable broth – the perfect base for any vegetarian dish!
Step 6
After the broth has completely cooled, store it in clean glass jars or airtight containers in the refrigerator. It will keep fresh for about a week.
