Making Fantastic Spicy Marinated Shrimp with a Flavorful Sauce
Just as there are marinated crabs, I’ve created a delicious marinated shrimp dish using a special sauce. It’s wonderfully flavorful with a spicy kick and a delightfully chewy texture. This recipe is sure to become a favorite!
Ingredients- 40 large shrimp (preferably plump and fresh)
- 1/4 apple (adds sweetness and depth to the sauce)
- 1/2 onion (for a slight crunch and sweetness)
- 8 Tbsp gochugaru (Korean chili flakes, coarse)
- 3 Tbsp gochugaru (Korean chili flakes, fine)
- 6 Tbsp soy sauce
- 2 Tbsp plum extract (maesilcheong)
- 5 cloves garlic
- 1 Tbsp minced ginger
- 2 Tbsp rice wine (cheongju)
- 1 Tbsp cooking wine (mirin)
Cooking Instructions
Step 1
Prepare the shrimp. First, trim the long antennae with scissors. Gently devein the shrimp by making a shallow cut along the back and removing the dark vein. Rinse the shrimp thoroughly under cold water. Drain them well on a rack to ensure the marinade adheres properly and they stay fresh.
Step 2
Finely mince the onion. You want it to be small enough to mix easily but still retain a slight texture when bitten into. This will add a lovely sweetness and a subtle crunch to the dish.
Step 3
Finely mince the garlic. To make it easier, you can first press the cloves flat with the side of your knife before mincing. Minced garlic is essential for adding a pungent aroma and removing any potential fishiness from the shrimp.
Step 4
Prepare the apple for the marinade. Peel the apple, remove the core and seeds, then grate or blend it into a smooth puree. The pureed apple will lend a natural sweetness and moisture to the sauce, balancing the spiciness.
Step 5
In a medium bowl, combine the coarse gochugaru (8 Tbsp) and fine gochugaru (3 Tbsp). Add the minced garlic, soy sauce (6 Tbsp), plum extract (2 Tbsp), minced ginger (1 Tbsp), rice wine (2 Tbsp), and cooking wine (1 Tbsp). Also add the minced onion and pureed apple. Mix everything thoroughly with a spoon or whisk until a smooth, cohesive sauce forms. Ensure there are no clumps.
Step 6
Add the drained shrimp to the prepared sauce. Gently toss the shrimp to coat them evenly with the marinade. Transfer the marinated shrimp into a clean glass container. Cover tightly and refrigerate for 2-3 days to allow the flavors to meld and the shrimp to marinate. Your delicious Spicy Marinated Shrimp is now ready to be enjoyed with rice or as a savory snack!
