The chickpeas, having absorbed plenty of water, will have significantly increased in volume, about 2 to 3 times their original size.

Do not discard the soaking water. Transfer the soaked chickpeas and this water into a pot and cook them together. This enhances the chickpeas’ natural nutty flavor. (You can add a pinch of salt or sugar to your preference, but it’s delicious to omit them to enjoy the chickpeas’ inherent nutty and mild taste.) Bring to a boil over high heat, then reduce to medium-high heat and simmer for about 30 minutes until fully tender.

Once the chickpeas are well-cooked, drain them thoroughly in a colander. You can give them a quick rinse with cold water to cool them down (a ‘cold shower’ helps).
