As my homemade basil pesto is running low, I decided to make a delicious shrimp and basil pesto pasta today to finish the jar beautifully. This recipe uses fresh shrimp and aromatic basil pesto for a restaurant-quality meal at home.

Ingredients

  • 3 Shrimp (peeled and deveined)
  • 60g Penne Pasta
  • 2 Button Mushrooms (sliced)
  • 10g Onion (finely minced)
  • Olive Oil (generous amount)
  • Grana Padano cheese (optional)
  • Basil Pesto (homemade or store-bought)
  • Fresh Basil Leaves (for garnish)
  • Salt (to taste)

Cooking Instructions

Step 1

First, take out 3 shrimp that were cleaned and stored in the freezer, and let them thaw. This ensures the shrimp retain their fresh texture.

Bring a pot of water to a boil and add salt. Once boiling, add 60g of penne pasta and cook according to the package directions. Drain the pasta once cooked al dente.

Heat a generous amount of olive oil in a pan over medium heat. Add the finely minced onion first and sauté until translucent, releasing its fragrant aroma.

Once the onion is softened, add the thawed shrimp and stir-fry together. Cook until the shrimp turn pink and are almost cooked through.
