Whip up a delightful Ssoya (Sausage and Vegetable Stir-fry) with just the vegetables and sausages from your fridge! This recipe is a crowd-pleaser for all ages and perfect as a side dish for rice or a tasty snack with a cold beer.
Main Ingredients- 18-20 Vienna sausages (other types of sausages can be used as preferred)
- 1 medium onion
- 1/2 carrot
- Other desired vegetables (bell peppers, zucchini, mushrooms, etc.)
Sweet and Savory Sauce- 2 Tbsp ketchup
- 2 Tbsp oligosaccharide or corn syrup
- 1 Tbsp gochujang (for a spicy kick)
- 1 Tbsp oyster sauce (for enhanced umami!)
- 1 tsp minced garlic

Cooking Instructions
Step 1
Prepare your assorted vegetables from the refrigerator. Slice the onion thickly, thinly slice the carrot into rounds or half-moons. If using other vegetables like bell peppers or zucchini, chop them into similar bite-sized pieces.
Step 2
Score the Vienna sausages with a knife to create a decorative pattern. Briefly blanching the sausages in boiling water helps remove impurities and excess oil, resulting in a cleaner taste. (This step is optional.)
Step 3
In a bowl, combine all the sauce ingredients: 2 Tbsp ketchup, 2 Tbsp oligosaccharide, 1 Tbsp gochujang, 1 Tbsp oyster sauce, and 1 tsp minced garlic. Mix well to create a delicious sauce.

Heat a lightly oiled pan over medium-high heat. Add the scored sausages first and stir-fry until they are lightly browned and slightly puffed up.
