Crispy & Chewy Garlic Scape Potato Pancake
This is the Ultimate K-Brunch! Make a Crispy and Chewy Potato Pancake (feat. Garlic Scapes)
Today, we’re making a crispy and chewy potato pancake with garlic scapes, which is easier to make than a regular potato pancake and perfect as a brunch menu item. 🙂
Ingredients- 250g Potatoes (about 1.5 medium potatoes)
- 80g Garlic Scapes (about 10-12 stalks)
- 1 Tbsp Potato Starch
- 1/2 tsp Salt
- Cooking Oil
Cooking Instructions
Step 1
First, wash the potatoes thoroughly and peel them. The key to a crispy texture is to julienne the potatoes as thinly as possible. Using a mandoline slicer will help you achieve uniform, thin cuts.
Step 2
Rinse the garlic scapes under running water until clean. Once the water has drained off, finely chop them into pieces about 0.3cm long. The crunchy texture of the garlic scapes will enhance the flavor of the potato pancake.
Step 3
In a large bowl, combine the thinly julienned potatoes and add 1/2 tsp of salt. Mix well to coat the potatoes. This step helps to draw out some of the moisture, making them crispier. Let it sit for about 5 minutes, then lightly drain any excess water. Next, add the chopped garlic scapes and 1 Tbsp of potato starch to the bowl. Mix everything thoroughly until all the ingredients are evenly coated with the potato starch. Ensuring the potato starch coats the potato shreds evenly is crucial for the best texture.
Step 4
Now, heat a pan over medium heat and add a generous amount of cooking oil. Spoon portions of the potato mixture onto the hot pan and flatten them into round shapes. Cook over medium-low heat to ensure they cook through without burning and become golden brown. Once one side is nicely browned and crispy, flip the pancake and cook the other side until golden brown as well. Once both sides are perfectly crispy, your delicious garlic scape potato pancake is ready to enjoy!
