Delicious Stir-Fried Aged Kimchi

Aged Kimchi Stir-Fry with an exquisite depth of flavor! It’s the ultimate rice-stealing side dish. Here’s a simple recipe using aged kimchi from your fridge that anyone can easily make.
Main Ingredients- 1 head of aged kimchi
Seasoning Ingredients- 1 Tbsp soy sauce (or seasoned soy sauce)
- 1.5 Tbsp brown sugar (adjust to your kimchi’s sourness)
- 1 Tbsp minced garlic
- A pinch of black pepper (a few grinds)
- 1 Tbsp gochugaru (Korean chili flakes)
- A pinch of sesame seeds
- 1 Tbsp soy sauce (or seasoned soy sauce)
- 1.5 Tbsp brown sugar (adjust to your kimchi’s sourness)
- 1 Tbsp minced garlic
- A pinch of black pepper (a few grinds)
- 1 Tbsp gochugaru (Korean chili flakes)
- A pinch of sesame seeds
Cooking Instructions
Step 1
Cut the aged kimchi into bite-sized pieces (about 2-3cm wide). Place the cut kimchi in a frying pan, and add about 1 ladleful of kimchi juice. Add a generous amount of cooking oil and stir-fry over medium heat until the kimchi softens. Stir occasionally to prevent burning.
Step 2
Once the kimchi is somewhat cooked, add all the prepared seasoning ingredients. Mix in the minced garlic, gochugaru, soy sauce, black pepper, and brown sugar. (Tip: Since the sourness and saltiness of aged kimchi can vary, it’s best to taste the kimchi and adjust the amount of sugar or soy sauce to your preference.)
Step 3
Reduce the heat to low and continue to stir-fry until the kimchi is completely softened and the seasonings are well combined. Keep stirring to prevent sticking. Finally, turn off the heat and sprinkle with sesame seeds for a delicious stir-fried aged kimchi finish!
