- 2/3 bunch chives (about 50g)
- 1/2 medium onion
- 1/2 stalk green onion (mostly the white part)
- 6 cloves garlic
- 1 red chili pepper (for color and mild heat)
Marinade Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Jin Ganjang (Korean soy sauce)
- 1/2 Tbsp Oyster Sauce (for umami)
- 1 Tbsp Oligodang (corn syrup or rice syrup, for gloss and sweetness)
- 1 Tbsp Yellow Sugar (adjust sweetness)
- 1 Tbsp Minced Garlic
- 2 Tbsp Mirin (cooking wine, to remove ducky smell)
- 2 Tbsp Ginger Wine (or more Mirin if unavailable)
- 1 Tbsp Sesame Oil (for nutty aroma)
- Pinch of Black Pepper (freshly ground is best)
- 2 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Gochugaru (Korean chili flakes)

Marinate the Duck: Add the cut duck meat to the bowl with the prepared marinade. Use your hands to gently massage and mix the duck with the sauce, ensuring every piece is well-coated. Let it marinate for at least 10 minutes to allow the flavors to penetrate the meat. For an even deeper flavor, marinate for 30 minutes in the refrigerator.

Prepare the Vegetables: Slice the vegetables for cooking. Cut the green onion into large, diagonal pieces. Thinly slice the onion. Smash or thinly slice the garlic cloves. Slice the red chili pepper diagonally. Wash the chives and cut them into roughly 2-2.5 inch lengths. Remember to add chives towards the end to maintain their fresh crunch.

Start Stir-Frying: Heat a large skillet or wok over medium heat. Add the marinated duck bulgogi to the hot pan. Stir gently and continuously to prevent sticking, allowing the duck to cook and release its natural oils.
