Diet-Friendly Seaweed Salad Recipe
A perfectly refreshing and light seaweed salad with a delightful tangy and clean flavor. It’s a healthy and flavorful option for when you’re craving something light and nutritious.
Main Ingredients- 2 handfuls dried seaweed (about 10-15g)
- 1/2 medium onion
- 1 tomato
- 1/4 apple
- 1/2 green bell pepper
- A small amount of cashews (optional)
Dressing- 1 Tbsp soy sauce (or seasoned soy sauce)
- 2 Tbsp calamansi concentrate or vinegar
- 1 Tbsp plum syrup (or corn syrup)

Cooking Instructions
Step 1
First, soak the dried seaweed in cold water for about 10 minutes until it is fully rehydrated and soft. Rinse it thoroughly under running water two to three times to remove any excess salt. Drain the seaweed well, pressing out any excess water. Cut the rehydrated seaweed into bite-sized pieces.
Step 2
Finely slice the onion and soak it in cold water for a few minutes to reduce its pungent taste, then drain. Slice the tomato and apple thinly. Core and thinly slice the green bell pepper for a crisp texture.
Step 3
In a bowl, combine the prepared seaweed with 1 Tbsp of plum syrup, 2 Tbsp of calamansi concentrate (or vinegar), and 1 Tbsp of soy sauce. Gently mix by hand, massaging the ingredients together, to allow the flavors to meld.
Step 4
Add all the sliced vegetables (onion, tomato, apple, and green bell pepper) to the seasoned seaweed. Toss gently to combine everything evenly, ensuring the fresh flavors of the vegetables complement the chewy texture of the seaweed.
Step 5
Finally, sprinkle a small amount of cashews over the salad, if desired, for added nutty flavor and crunch. Your wholesome and delicious seaweed salad is now ready! It’s a perfect light meal, so be sure to give it a try.
