  • 2 Tbsp Soy sauce
  • 1 Tbsp Oyster sauce
  • 2 Tbsp Oligodang (corn syrup)

First, rinse the giant squid tentacles thoroughly under running water. After draining, slice them thinly on a diagonal, about 0.5 cm thick, to ensure a pleasant chewiness. Place the sliced squid tentacles into a pan.

Now it’s time to add the sauce for stir-frying the squid. Add 1 Tbsp of oyster sauce and 2 Tbsp of soy sauce to the pan. Let them sit with the squid for a moment to allow the flavors to begin mingling.

Once the squid and sauce are somewhat combined, turn the heat to medium and begin stir-frying. As the squid cooks, it will release moisture. It’s important to continue stir-frying until this moisture reduces and the sauce thickens.

When the moisture released from the squid has reduced and the squid starts to cook slightly, add 2 Tbsp of oligodang (corn syrup) for sweetness. You can adjust the amount of oligodang to your preference. This also adds a lovely sheen to the dish.

Continue stir-frying after adding the oligodang. The key to this dish is to stir-fry until the moisture from the squid has almost completely evaporated, leaving a glossy coating. Finally, sprinkle sesame seeds generously for a nutty aroma and give it one last quick toss to finish your delicious stir-fried squid.
