Stir-fried Garlic Scapes with Shrimp: A Quick & Delicious Recipe
Super Easy Garlic Scape and Shrimp Stir-fry – Perfect for Beginners!
I made this savory and sweet garlic scape and shrimp stir-fry using garlic scapes from the countryside! It’s a real ‘rice thief’ that will disappear in no time. ❣
Main Ingredients- 750g fresh garlic scapes
- 75g dried shrimp (decapitated shrimp recommended!)
Seasoning Ingredients- 1/2 cup cooking oil (approx. 100ml)
- 7.5 Tbsp soy sauce
- 7.5 Tbsp corn syrup (oligo-dang)
- 1/2 Tbsp sugar (optional)
- 2 Tbsp perilla oil (deul-gireum)
- 1 Tbsp sesame seeds
- 1/2 cup cooking oil (approx. 100ml)
- 7.5 Tbsp soy sauce
- 7.5 Tbsp corn syrup (oligo-dang)
- 1/2 Tbsp sugar (optional)
- 2 Tbsp perilla oil (deul-gireum)
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
First, prepare the garlic scapes and dried shrimp. Using decapitated dried shrimp (with heads and tails removed) makes them more convenient and pleasant to eat later!
Step 2
Wash the garlic scapes thoroughly under running water. It’s important to clean them meticulously to remove any soil or impurities. After washing, drain them well in a colander.
Step 3
To remove any fishy smell from the dried shrimp and achieve a crispier texture, heat a dry pan over medium-low heat. Add the dried shrimp to the heated pan and stir continuously to prevent burning, roasting them until they are nice and crispy. Roasting them gently, almost ‘drying’ them, is ideal.
Step 4
As you stir-fry the shrimp, you’ll notice fine powdery bits forming in the pan. These powders add to the delicious flavor of the shrimp.
Step 5
The fine powders created during the stir-frying process can feel slightly rough when you bite into them. Therefore, place the shrimp in a fine-mesh sieve and shake vigorously to remove these powders. This process separates the fine powders from the shrimp, resulting in a cleaner taste. (Tip: Shaking the sieve over the sink will prevent your countertop from getting messy and is much more convenient!)
Step 6
Sifting the shrimp over a wide sieve makes it easy to separate the shrimp from the powders. Leave the sifted shrimp on the sieve to cool. This helps maintain their crispiness.
Step 7
Trim the ends of the washed and drained garlic scapes. Cut them into bite-sized pieces, about two finger-joints long. (Tip: Since garlic scapes vary in length, it’s hard to cut them all to the exact same size. Don’t discard the shorter pieces; you can include them all in the stir-fry for a more economical and equally delicious dish!)
Step 8
Prepare all the cut garlic scapes.
Step 9
Heat a wide pan over medium heat and add about 4-5 tablespoons of cooking oil. Let the oil get sufficiently hot.
Step 10
Once the oil is hot, add all the cut garlic scapes to the pan. Stir-frying them over high heat at this stage will keep them wonderfully crisp. (Caution: Be careful as hot oil may splatter when you add the garlic scapes!)
Step 11
Stir-fry the garlic scapes over high heat for 2-3 minutes. They are ready when they soften slightly and can be bent, as they transition from their initial firm state.
Step 12
Once the garlic scapes are moderately stir-fried, add the roasted dried shrimp you prepared earlier and mix them together while continuing to stir-fry.
Step 13
When the shrimp and garlic scapes are well combined, push them to one side of the pan. Pour about 2/3 of the pre-mixed soy sauce and corn syrup mixture into the empty space and let it bubble vigorously. Once the sauce starts boiling, mix it with the other ingredients and continue stir-frying.
Step 14
Taste the mixture. If it needs more seasoning, add the remaining 1/3 of the sauce and bring it to a boil again before mixing. Finally, add 1/2 tablespoon of sugar and stir-fry quickly to coat all the ingredients, finishing the dish. (Tip: I skipped the final sugar addition to reduce sweetness. At this stage, the seasoning should taste slightly stronger than you prefer, because adding perilla oil will mellow the saltiness. ♡)
Step 15
Turn off the heat. Add 2 tablespoons of perilla oil and 1 tablespoon of sesame seeds, then gently toss to combine. Your delicious ‘Garlic Scape and Shrimp Stir-fry,’ a perfect accompaniment to rice, is now complete! ❣
