A delightful combination of savory mentaiko (spicy cod roe) and creamy potatoes! Enjoy it as a hearty brunch with bread, or as the ultimate snack with a cold beer. Main Ingredients- 5 Potatoes (medium-sized)
- Pinch of salt
- Pinch of black pepper
- 3 Mentaiko (spicy cod roe sacs)
- 1 paper cup (approx. 200ml) heavy cream
- 1/2 paper cup (approx. 100ml) milk
- Parmesan cheese, as needed (adjust to taste)
- Butter, for greasing the baking dish
Cooking Instructions
Step 1
First, wash the potatoes thoroughly to remove any dirt. Then, thinly slice them into rounds about 2-3mm thick. Slicing them thinly is key to ensure they cook evenly and quickly.
Step 2
Prepare your three mentaiko sacs. For two of them, cut them into 2cm pieces to be layered in the gratin. For the remaining mentaiko, gently scrape off the outer skin using the back of a knife to extract only the roe. This will give a smoother texture to the filling.
Step 3
In a bowl, combine the heavy cream (1 paper cup) and milk (1/2 paper cup). Add the extracted mentaiko roe from the third sac, a pinch of salt, and a pinch of black pepper. Mix well to create the mentaiko filling. Be mindful of the mentaiko’s natural saltiness when adding salt.
Step 4
Generously grease your oven-safe dish with butter. This prevents sticking and adds a lovely buttery flavor. Begin layering the sliced potatoes, the chopped mentaiko pieces, and a sprinkle of Parmesan cheese in alternating layers within the buttered dish. Finish with a generous topping of Parmesan cheese for a golden crust.
Step 5
Bake in a preheated oven at 200°C (390°F) for approximately 30 minutes, or until the potatoes are tender and the top is golden brown. Baking time may vary depending on your oven. Serve hot straight from the oven to enjoy the delicious harmony of savory mentaiko and creamy potatoes.
