Main Ingredients- 1 Zucchini (approx. 240g)
- 60g Bacon
- 15g Baby leaf greens or sprouts
Seasoning & Aromatics- 2.5ml Salt (for salting zucchini, approx. 1/2 tsp)
- 2.5ml Minced garlic (approx. 1/2 tsp)
- 7.5ml Cooking oil (approx. 1.5 tsp)
- A pinch of dried parsley flakes

Cooking Instructions
Step 1
Wash the zucchini thoroughly and slice it into approximately 1cm thick rounds. Prepare them for cooking.
Step 2
Place the sliced zucchini and 2.5ml of salt into a plastic bag. Inflate the bag slightly with air and gently shake to ensure the salt is evenly distributed over the zucchini pieces.
Step 3
Remove the air from the bag and let the zucchini salt-pickle for 10 minutes. After 10 minutes, flip the zucchini in the bag and let it pickle for another 10 minutes. This process draws out excess moisture, enhancing the flavor and texture.
Step 4
Cut the bacon into small pieces, about 1-2cm in size (total 60g). Rinse the baby leaf greens or sprouts and pat them dry.

Heat the cooking oil (7.5ml) in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the chopped bacon and the drained zucchini. Sauté gently, being careful not to burn the ingredients.

Instead of stirring with a spatula, try gently tossing or shaking the pan to cook the ingredients evenly without breaking them. Cook over medium to high heat for about 1 minute, or until the zucchini becomes slightly translucent and the bacon is lightly browned.
Step 7
After about 1 minute, add the prepared baby leaf greens. Sauté for just about 10 seconds, stirring quickly. The key is to wilt them slightly without overcooking.

Finally, sprinkle a pinch of dried parsley flakes over the dish for an aromatic finish and a touch of color.
