First, prepare the vegetables and bacon. Thinly slice the onion, and thinly slice the garlic cloves. Cut the bacon into 1cm thick pieces. Set aside.

To cook the spaghetti, bring 6 cups of water to a rolling boil in a large pot. Add 1 tablespoon of salt and 1 tablespoon of olive oil to the boiling water. This helps prevent the pasta from sticking and adds flavor. Add the spaghetti and cook for about 7 minutes, or until al dente (slightly firm to the bite). Drain the pasta and set aside.

Now, let’s make the ‘cloud eggs’. Carefully separate the egg yolks from the whites, using two separate bowls. In a clean bowl, whisk the egg whites vigorously with a whisk (or electric mixer) until stiff peaks form, creating a meringue. Whisk until the peaks stand up straight when the whisk is lifted. This ensures the ‘clouds’ will hold their shape and be fluffy.
