Step 1
Hello everyone! Today, we’re making a nutrient-rich sweet pumpkin porridge that everyone loves and is easy to make. Its sweet and smooth flavor is exceptional, so let’s get started together!

Wash the sweet pumpkins thoroughly. Use a peeler to remove the skin. Cut them in half, scoop out the seeds and pulp, and then cut into bite-sized pieces (about 3-4 cm). Place them in a pot with just enough water to cover and simmer for about 20 minutes until very tender. They should be easily pierced with a fork.
Step 3
Drain the cooked pumpkin (save the cooking water for later) and transfer it to a blender to puree until smooth. If you don’t have a blender, you can mash it with a fork or a potato masher. Once you’ve reached this stage, you’re almost done!
Step 4
Pour the pureed pumpkin into the pot. Add about one ladleful of the reserved pumpkin cooking water. Begin to cook over low heat, stirring constantly to prevent it from sticking to the bottom of the pot. This constant stirring is crucial.

As the porridge starts to bubble and small bubbles appear, add the pre-cooked chestnuts and continue to simmer. Porridge can easily stick to the bottom, so remember to stir it thoroughly, reaching the bottom, every so often. After adding the chestnuts and simmering a bit more, you’ll see bubbles rising again.

When the porridge boils up again, sift the 1 cup of glutinous rice flour evenly over the surface. While adding the flour, gently stir to dissolve any lumps and ensure it mixes smoothly into the porridge.
Step 7
As the glutinous rice flour is incorporated, the porridge will gradually thicken and transform into a creamy, porridge-like consistency. You’ll feel a thick, slightly heavy stirring resistance, and occasionally hear gentle ‘popping’ sounds. Now, add 3 tablespoons of sugar and 1 teaspoon of salt to season. Please adjust the amount of sugar based on the natural sweetness of your pumpkin.

Once the sugar and salt are well combined and the porridge has simmered for another minute or two (about 1-2 minutes), the cooking is complete. Turn off the heat and enjoy your delicious sweet pumpkin porridge!
