Ingredients- 1 Pollack Roe (Myeongran)
- 3 Fresh Eggs
- 150cc Water (approx. 3/4 cup)
- 1/2 tsp Mirin (cooking wine)
- 1/2 tsp Anchovy Sauce (or fish sauce)
- 1/2 tsp Salted Shrimp (minced)
- A little Carrot (finely minced)
- A little Zucchini (finely minced)
- A little Green Onion (white part, finely minced)
- 1/2 Serrano Pepper (seeds removed, finely minced)
- 1/2 Red Chili Pepper (finely minced)
- A little Sesame Seeds (for garnish)
- A little Sesame Oil
- A little Chili Powder (for garnish)
Cooking Instructions
Step 1
Thaw the frozen pollack roe naturally. Once thawed, drizzle a little sesame oil over it. This helps to remove any fishy smell and adds a lovely nutty aroma.

Crack 3 fresh eggs into a bowl.

Since one egg typically weighs around 50g, we’ll use 150g of egg equivalent. Add an equal amount of water, 150cc (about 3/4 cup), to the eggs. This water-to-egg ratio is key for a perfectly smooth steamed egg.

Season the egg mixture with 1/2 tsp mirin, 1/2 tsp anchovy sauce (or soy sauce/fish sauce), and 1/2 tsp finely minced salted shrimp. Mincing the salted shrimp finely ensures a clean umami flavor without any grittiness.
