Cutting the potatoes into larger cubes for braising creates a wonderfully different texture and flavor compared to thinly sliced stir-fried potatoes. While it might take a little longer, the taste is absolutely worth it.

First, peel the potatoes and cut them into roughly 1.5-2 cm cubes. Avoid cutting them too small, as they might fall apart during cooking. Now, let’s prepare the delicious sauce. In a bowl, combine 2 Tbsp soy sauce, 1 tsp minced garlic, 1/2 tsp red pepper flakes (gochugaru), 1 tsp sesame oil, and 1 tsp sugar. Mix them well. It’s a good idea to add a little water (about 2-3 Tbsp) to the braising sauce. Without water, the soy sauce might burn or the potatoes might not cook through properly. Add the cubed potatoes to the prepared sauce and toss to coat them evenly. Heat a tablespoon of cooking oil in a frying pan over medium heat, then add the coated potatoes. Sauté for about 3-5 minutes, or until the outer surface of the potatoes begins to look slightly cooked and translucent. Aim to cook them until about one-third done.

Once the potatoes are partially cooked, add all the prepared sauce to the pan. Reduce the heat to medium-low and let it simmer. It’s crucial to stir continuously to prevent the sauce from sticking to the bottom and burning. Finally, add a handful of chopped green onions and a sprinkle of sesame seeds for garnish.
