Main Ingredients- 1 bunch of fresh garlicky scallions (about 200g)
- 4 sheets of flat, square fish cakes (about 200g)
Seasoning- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp oligosaccharide (adjust to taste)
- 0.5 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- A pinch of black pepper
- 1 Tbsp cooking oil (for stir-frying)
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp oligosaccharide (adjust to taste)
- 0.5 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- A pinch of black pepper
- 1 Tbsp cooking oil (for stir-frying)
Cooking Instructions
Step 1
Begin by preparing the garlicky scallions. Trim off the tough ends. You can also gently scrape or trim the bulbous part where the garlic cloves form to ensure a tender bite.
Step 2
Rinse the prepared garlicky scallions thoroughly under running water. Cut them into bite-sized pieces, about 4-5 cm long. Avoid cutting them too thinly, as they might break apart during cooking.
Step 3
Cut the fish cakes into similar bite-sized pieces, about 4-5 cm in length, to match the garlicky scallions. You can cut them smaller if serving to children.
Step 4
Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the cut garlicky scallions and stir-fry for about 1-2 minutes until they become fragrant and slightly tender, preserving their crispness.
Step 5
Once the garlicky scallions start to turn slightly translucent, pour 3 Tbsp of soy sauce around the edges of the pan. Stir well to coat the scallions and continue to stir-fry for another minute until the soy sauce is absorbed.
Step 6
Add the cut fish cakes to the pan. Pour in 1 Tbsp of oyster sauce for added umami. Stir-fry everything together until the fish cakes are evenly coated and have softened slightly, about 1-2 minutes.
Step 7
When the fish cakes and garlicky scallions are well combined with the sauce, add 1 Tbsp of oligosaccharide for a touch of sweetness and gloss. Stir lightly for a moment. Adding it just before turning off the heat helps prevent burning and gives a nice sheen. Taste and add more oligosaccharide if you prefer it sweeter.
Step 8
Finally, drizzle in 0.5 Tbsp of sesame oil for aroma, add 0.5 Tbsp of toasted sesame seeds for nuttiness, and a pinch of black pepper. Gently toss everything together to combine evenly.
Step 9
Your delicious Garlicky Scallion and Fish Cake Stir-Fry is ready! Enjoy the delightful textures and savory flavors. This dish is perfect as a side for any meal or as part of a packed lunch.
