Main Ingredients

  • 500ml milk
  • 1 slice of watermelon (or watermelon cut into bite-sized pieces)
  • Approx. 20 blueberries
  • 2 Tbsp roasted grain powder (Misutgaru)
  • 1 paper cup of red beans (dried)
  • 2 Tbsp green tea ice cream

For the Red Bean Paste

  • 5 Tbsp oligodang (corn syrup)
  • A pinch of salt
  • 5 cups of water
  • 4 Tbsp potato starch

Cooking Instructions

Step 1

Rinse 1 cup of dried red beans thoroughly. Soak them in cold water for about 1 hour. After soaking, drain the water, place the beans in a pot, add 5 cups of fresh water, and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for another 10 minutes. Drain this water (this helps to remove any bitterness from the beans).

Return the drained beans to the pot and add another 5 cups of fresh water. Cook until the red beans are very soft and easily mashed. Once the beans are tender, stir in a pinch of salt and 5 Tbsp of oligodang. Continue to simmer for about 5 more minutes to thicken and sweeten the paste. In a separate small bowl, whisk together 4 Tbsp of potato starch with 4 Tbsp of water until smooth, ensuring no lumps. Gradually pour this starch slurry into the simmering red bean mixture while stirring constantly, until the paste reaches a thick, pudding-like consistency. Remove from heat and let it cool completely. Your delicious homemade red bean paste is ready!

Prepare the toppings in advance. Cut the watermelon into desired bite-sized pieces. Wash the blueberries and pat them dry. Have the misutgaru ready to sprinkle.

Freeze 500ml of milk in a shallow dish or ice cube tray. About 15 minutes before assembling the bingsu, take the frozen milk out of the freezer. This slightly softens it, making it easier to shave. Use the edge of a spoon to scrape the frozen milk into fine flakes, or pulse it briefly in a blender until it resembles fine snow. Be careful not to over-blend into a liquid.

Place the shaved or blended milk ice into your serving bowl. This forms the fluffy, icy base of your bingsu.

Take the green tea ice cream out of the freezer about 5 minutes before serving so it’s easy to scoop.

Artfully arrange the prepared toppings over the milk ice base: spoon generous portions of the sweet red bean paste, add the fresh watermelon chunks, scatter the blueberries, and sprinkle the nutty misutgaru.
