Core Ingredients- 2 large eggs
- 150g curry roux (solid or powder)
- 1 medium onion
Cooking Instructions
Step 1
First, wash and peel one medium onion, then thinly slice it into strips. Next, crack two large eggs into a bowl and whisk them thoroughly with a fork or whisk until the yolks and whites are well combined, creating your egg mixture. Set aside.
Step 2
Now, heat a frying pan over medium heat. Add the knob of butter or cooking oil to the preheated pan. Add the sliced onions and sauté until they become translucent. Keep the heat at medium-low to allow the onions to caramelize and release their natural sweetness.
Step 3
Once the onions have been sautéed for at least 10 minutes over medium heat, turning a light brown color and emitting a sweet aroma, pour in 3.5 cups of rice water or plain water (approximately 700ml). Using rice water will add a richer, more umami flavor to the curry.
Step 4
When the liquid begins to boil, add the 150g of curry roux. Stir continuously with a spoon or ladle until the curry is completely dissolved and smooth, ensuring it doesn’t stick to the bottom of the pan.
Step 5
Once the curry comes to a gentle simmer again, slowly drizzle the prepared egg mixture over the curry. Let it cook for about 1 minute until the egg is set and has a soft, custardy texture. Your delicious egg curry is now complete! Serve hot over steamed rice. It pairs wonderfully with kimchi or pickled radish.
