Main Ingredients

  • 2 medium potatoes
  • 1/4 onion
  • A small amount of mushrooms (any kind you have)
  • 2 sheets of dried kelp (dashima)
  • 1/2 chili pepper (or any red pepper)
  • A little green onion

Seasoning

  • 1/2 Tbsp Doenjang (fermented soybean paste)
  • 1/2 Tbsp Guk-ganjang (soup soy sauce)
  • A pinch of salt
  • 1 tsp minced garlic
  • 1 Tbsp Gochugaru (red pepper flakes)

Cooking Instructions

Step 1

First, wash the potatoes thoroughly. Use a peeler or a paring knife to remove the skin. For any deep-set eyes or sprouts, use the tip of the knife to carefully clean them out.

Cut the potatoes into bite-sized pieces, about 2-3 cm cubes. Slice the onion thinly. Finely chop the chili pepper. Prepare the mushrooms and green onion by slicing them. Rinse the dried kelp sheets in cold water.

In a pot, add the cut potatoes and dried kelp. Pour in enough water to fill the pot about halfway to a little over. Place over high heat and bring to a boil. Add 1/2 Tbsp of Doenjang to the potatoes and stir well to dissolve any clumps. This step will infuse the potatoes with a savory depth of flavor.

Once the soup starts boiling, reduce the heat to medium. Add the minced garlic and the prepared mushrooms. Let it simmer until the potatoes are tender enough to be easily pierced with a fork. During this simmering time, add 1/2 Tbsp of Guk-ganjang for added umami. Adjust the seasoning with a pinch of salt if needed.

When the potatoes are nearly cooked, add the sliced onion, chili pepper, and the prepared green onion to the pot. If you have frozen mushrooms, this is a good time to add them. Cover the pot and let it simmer further until all the ingredients are well combined.

Finally, stir in 1 Tbsp of Gochugaru for a spicy kick. You can adjust the amount of Gochugaru based on your preference for spiciness and the desired color of the soup. Taste and add more salt or Guk-ganjang if necessary to achieve the perfect balance.
