Main Ingredients

  • 1 block Silken Tofu
  • 4 Eggs
  • 1 Cheongyang pepper (finely chopped, seeds removed)
  • 2 Tbsp Carrot (finely chopped)

Seasoning & Broth

  • 1 Tbsp Shrimp paste broth (liquid only)
  • 1 tsp Salt
  • 60ml Water or kelp broth
  • A little cooking rice wine (to remove eggy smell)

Cooking Instructions

Step 1

In a small pot or pan, combine 60ml of water with a piece of kelp (about 2cm). Simmer gently over low heat for 10 minutes to extract the kelp broth. Remove the kelp piece.

Step 1

Step 2

Finely chop the Cheongyang pepper after removing the stem and seeds. If you prefer less spice, you can remove more seeds or omit it entirely.

Step 2

Step 3

Finely chop the carrot after peeling it. The carrot adds both color and nutritional value to the dish.

Step 3

Step 4

In a large bowl, crack the 4 eggs. Add the measured shrimp paste broth. The shrimp paste broth adds both saltiness and umami, so it’s highly recommended.

Step 4

Step 5

Add 1 tsp of salt and a little cooking rice wine to the egg mixture. Rice wine helps to neutralize the eggy smell, resulting in a cleaner taste.

Step 5

Step 6

Pour the 60ml of the prepared kelp broth into the egg mixture. Make sure the broth is not too hot; let it cool slightly before adding.

Step 6

Step 7

Gently whisk the egg mixture with a whisk until well combined. For a smoother texture, strain the mixture through a fine-mesh sieve. This step ensures a silky-smooth steamed egg.

Step 7

Step 8

Carefully take the silken tofu out of its packaging and place it on a cutting board. Cut it into bite-sized pieces, about 1 to 1.5cm thick. Cutting them too small might reduce the pleasing texture.

Step 8

Step 9

Arrange the cut silken tofu pieces evenly at the bottom of a microwave-safe container (like a earthenware pot or a bowl). Gently pour the strained egg mixture over the tofu. Cover the container with plastic wrap and poke 2-3 holes with a chopstick or toothpick to allow steam to escape during cooking.

Step 9

Step 10

Microwave on high for about 6-7 minutes. Cooking time may vary depending on your microwave’s wattage, so check for doneness and adjust the time as needed.

Step 10

Step 11

Your silken tofu steamed egg is ready! Made without a stove, the silken tofu makes it incredibly soft and moist. It’s best enjoyed warm right after cooking.

Step 11

Step 12

This dish can be prepared in about 5 minutes, making it perfect for a quick breakfast side for kids or a satisfying, healthy meal for those on a diet due to its low-calorie, high-protein content. You can also sprinkle some chopped green onions or sesame seeds on top for extra flavor.
