Tteokguk Ingredients- 4 servings of tteokguk rice cakes (approx. 600-700g)
- Store-bought beef bone broth, sufficient amount (1.5L – 2L, adjust based on product volume)
- 2 eggs
- A little bit of gimjaban (seaweed flakes)
Seasoning and Other Ingredients- 1 Tbsp soup soy sauce
- 1/2 Tbsp salt (adjust to taste)
- 1/4 large green onion (chopped)
- 1/2 Tbsp minced garlic
- 1 Tbsp soup soy sauce
- 1/2 Tbsp salt (adjust to taste)
- 1/4 large green onion (chopped)
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, gently rinse the tteokguk rice cakes under running water to remove any debris. Then, soak them in cool or lukewarm water for about 10-15 minutes to soften them slightly. This step ensures the rice cakes become tender and chewy when cooked, preventing them from breaking apart.
Step 2
While the rice cakes are soaking, prepare the egg mixture. Crack 2 eggs into a bowl, remove the chalazae (the white stringy parts), and whisk them well with a fork. We’re using a simple egg mixture rather than a rolled omelet so the children will enjoy the soft texture.
Step 3
Now, get a pot ready for the tteokguk. Pour the store-bought beef bone broth into the pot and start heating it over medium heat. Once the broth begins to boil, add 1 tablespoon of soup soy sauce to deepen the flavor. Adding soup soy sauce first helps maintain the milky white color of the broth while enhancing its savory notes.
Step 4
After seasoning with soup soy sauce, adjust the taste with salt as needed. Start with 1/2 tablespoon of salt, taste, and then add more if necessary to suit your preference. Don’t add too much salt at once; it’s always easier to add more than to correct an overly salty soup.
Step 5
Once the beef bone broth is at a rolling boil, drain the soaked tteokguk rice cakes and add them to the pot. Stir gently with a wooden spoon or spatula to prevent the rice cakes from sticking to the bottom or to each other as they cook. Add 1/2 tablespoon of minced garlic at this stage to eliminate any potential gamey smell from the broth and to create a cleaner, more delicious soup flavor.
Step 6
When the rice cakes are cooked through and start to float, slowly pour the prepared egg mixture around the edges of the pot. Allow the egg mixture to cook and form soft curds before gently stirring. Finally, add the chopped green onions and simmer for another minute. The fresh aroma of the green onions will blend with the broth, adding another layer of flavor.
Step 7
Ladle the finished tteokguk into individual serving bowls. Sprinkle a generous amount of gimjaban (seaweed flakes) on top for an extra touch of savory flavor and texture. Your delicious beef bone broth tteokguk is now ready! Enjoy a satisfying and hearty meal with this warm bowl of tteokguk.
