Simple Stir-fried Pork Belly and Kimchi

Hello everyone, this is Kim Jin-ok. Times are tough these days, aren’t they? I’m really trying to save money myself lately. I want to eat out, but I need to be economical… When you’re craving that ‘grilled kimchi with pork belly’ experience from a restaurant but want it at home, try making this incredibly simple Pork Belly and Kimchi Stir-fry! It’s quick, easy, and incredibly satisfying.
Main Ingredients- Pork belly (as much as you like)
- Well-fermented napa cabbage kimchi (as much as you like)
- Whole garlic cloves
- Sesame oil
Cooking Instructions
Step 1
1. Heat a pan over medium heat and cook the pork belly until golden brown and crispy on both sides. Slice the kimchi into bite-sized pieces and thinly slice the whole garlic cloves.

2. Once one side of the pork belly is nicely browned, flip it over. Add the sliced garlic to the pan and cook until the garlic is also golden brown and fragrant.

3. Transfer the cooked pork belly and garlic to a plate lined with paper towels to drain some of the excess grease. Lightly wipe out some of the rendered pork fat from the pan with a paper towel, leaving a small amount of fat behind to use for stir-frying the kimchi.
Step 4
4. Add the well-fermented kimchi to the pan with the remaining pork fat. Drizzle in a little sesame oil and stir-fry over medium heat until the kimchi is nicely browned and slightly caramelized. If your kimchi is very sour, a tiny pinch of sugar can balance the flavor.
Step 5
5. Once the kimchi is beautifully browned, add the pre-cooked pork belly and garlic back into the pan. Stir everything together gently and cook for just another minute or so until well combined. Your delicious Pork Belly and Kimchi Stir-fry is now complete! Enjoy it with a warm bowl of rice.
