Hello everyone, this is Superpower! Today, I’ve made a wonderful stir-fried zucchini dish that’s perfect as a side for any meal. It uses simple ingredients and is incredibly easy to make, yet incredibly delicious. If you love zucchini, you should definitely give this recipe a try. I’ve prepared enough for about two servings per person. Let’s get started with how to make this delightful stir-fried zucchini!
Ingredients- 1/2 medium zucchini (approx. 200g)
- 1/3 stalk green onion
- 2 cloves garlic
- 1 red chili pepper
- 1/3 Tbsp salted shrimp (saeujeot)
- 1/2 tsp coarse salt
- 1 Tbsp mirin (rice wine)
- Sesame seeds, to garnish
Cooking Instructions
Step 1
Thoroughly wash half a medium zucchini, pat it dry, and slice it into bite-sized, half-moon shapes about 0.5 cm thick. Slicing them too thinly might cause them to break apart during cooking, so aim for a consistent thickness.
Step 2
Prepare the aromatic ingredients. Finely chop the green onion (1/3 stalk), separating the white and green parts. Mince the 2 cloves of garlic. Slice the red chili pepper (1 piece) diagonally for a vibrant color.
Step 3
Heat about 1-2 tablespoons of cooking oil in a wide pan over medium-low heat. Add the sliced zucchini. To prevent too much moisture from releasing immediately, it’s best to let the zucchini sit in the pan for about a minute to begin cooking gently before stirring.
Step 4
As the zucchini begins to soften, add 1/3 Tbsp of salted shrimp, the minced garlic, the white parts of the green onion, 1 Tbsp of mirin, and 1/2 tsp of coarse salt. Stir-fry over medium heat until the zucchini is tender. Using salted shrimp adds a deeper umami flavor compared to just using salt.
Step 5
Once the zucchini turns slightly translucent and tender, add the sliced red chili pepper and the green parts of the green onion. Stir-fry for about 30 seconds more, just until the colors brighten. Be careful not to overcook, as it can lose its pleasant crispness.
Step 6
When all ingredients are well combined, turn off the heat. Just before serving, sprinkle a generous amount of sesame seeds for a nutty aroma and flavor. A small drizzle of sesame oil is also a delicious addition if you like.
