By rinsing the dried shredded squids thoroughly and briefly heating them in the microwave before stir-frying, you can achieve a tender and chewy texture without any dryness. Enjoy this wonderfully soft and savory Korean stir-fry that everyone will love, made effortlessly at home.
Main Ingredients- 100g dried shredded squids (Jinmichae)
- 2 Tbsp soy sauce
- 2 cloves garlic, minced
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp sesame seeds
- A little canola oil
Cooking Instructions
Step 1
First, gently separate the dried shredded squids if they are clumped together and rinse them clean under cold running water. This step removes any dust or impurities and helps to soften the squids.
Step 2
Gently squeeze out excess water from the rinsed dried shredded squids. Be careful not to squeeze too hard, as this can make the squids tough.
Step 3
Place the prepared dried shredded squids in a microwave-safe bowl and heat for just 1 minute. This brief heating helps to evaporate some moisture, contributing to a much softer texture when stir-fried.
Step 4
Heat a wok or a deep pan (a Korean wok is recommended) over medium-low heat with a little canola oil. Add the minced garlic and sauté until fragrant, being careful not to burn it. The goal is to infuse the oil with a gentle garlic aroma.

Add the microwave-heated dried shredded squids to the pan with the fragrant garlic. Stir-fry them together, ensuring they don’t stick to the pan. Once lightly stir-fried, add 2 tablespoons of soy sauce and mix well, continuing to stir-fry until the soy sauce is evenly distributed among the squids.

Once the soy sauce is absorbed, add 1 tablespoon of corn syrup for sweetness and 1 tablespoon of sesame seeds for nutty flavor. Stir everything together until well combined. You can substitute corn syrup with rice syrup if preferred.

Give it one final stir-fry to ensure all the seasonings are well incorporated, then turn off the heat. Avoid overcooking, as this can make the dried shredded squids tough again.
