How to Make Deliciously Spicy and Chewy Stir-Fried Mushrooms
I stir-fried these king oyster mushrooms to be spicy and chewy, and they turned out absolutely delicious! It’s incredibly simple to make.
Main Ingredients- 5 King oyster mushrooms
- 1/2 Green onion
Seasoning- 1 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Soy sauce (for seasoned dishes)
- 1 Tbsp Minced garlic
- 1 Tbsp Corn syrup
- 1 Tbsp Tuna extract (or fish sauce)
- 1 Tbsp Perilla oil
- Sesame seeds (to garnish)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Soy sauce (for seasoned dishes)
- 1 Tbsp Minced garlic
- 1 Tbsp Corn syrup
- 1 Tbsp Tuna extract (or fish sauce)
- 1 Tbsp Perilla oil
- Sesame seeds (to garnish)
Cooking Instructions
Step 1
First, rinse the fresh king oyster mushrooms thoroughly under running water and pat them dry. Then, slice them into approximately 0.5cm thick rounds. Slicing them too thinly might cause them to break apart during cooking, so aim for a moderate thickness for a pleasant texture.
Step 2
Once sliced, further cut the larger mushroom pieces into three segments, creating bite-sized portions. This size helps the mushrooms absorb the sauce well and provides a satisfying chew. Slice the green onion diagonally into long pieces.
Step 3
Heat a pan with a generous amount of cooking oil over medium heat. Add the sliced king oyster mushrooms and begin to stir-fry. Cook until the mushrooms release their moisture and start to turn golden brown. This step is crucial for developing their rich flavor.
Step 4
When the mushrooms are partially cooked, pour 4 tablespoons of soy sauce for seasoned dishes around the edges of the pan. Initially, you can stir-fry over high heat to evaporate excess moisture. However, once the soy sauce is added, reduce the heat to medium to prevent the sauce from burning and ensure it coats the mushrooms evenly. This technique infuses the mushrooms with a deep soy sauce flavor.
Step 5
Now, add all the remaining seasoning ingredients: gochugaru, minced garlic, corn syrup, tuna extract, and perilla oil to the pan. Stir everything together with the mushrooms, ensuring all ingredients are well combined. Continue to stir-fry until glossy, adjusting the heat as needed to prevent burning. Finally, sprinkle with sesame seeds for garnish.
Step 6
This finished spicy and chewy stir-fried king oyster mushroom dish is a perfect side for rice. The savory and slightly spicy flavor will awaken your appetite, and the chewy texture of the mushrooms makes every bite a delight. Serve it over a bowl of freshly steamed rice for a meal that will disappear in no time. Your ultimate rice-stealing side dish has been created!
