Main Ingredients

  • 1 Squid (cleaned or whole)
  • 1/2 Onion
  • 100g Cabbage
  • 30g Carrot
  • 1 Green Onion
  • 2 Korean Green Chilies (Cheongyang)
  • 1 Red Chili

Sauce

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Brown Sugar (helps absorb moisture and adds sweetness)
  • 0.5 Tbsp Minced Garlic
  • 3 Tbsp Cheongju or Mirin (rice wine, for removing gaminess and enhancing flavor)
  • 1.5 Tbsp Cooking Oil
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper

Cooking Instructions

1. Prepare the Squid: If using pre-cleaned squid, sprinkle a little flour on it and rub gently to wash, ensuring the suckers are clean.

2. Tip for Peeling Squid Skin: If using a whole squid, sprinkle a little coarse salt on the body and use a kitchen towel to rub off the skin. It comes off much more easily than you’d think.

3. Scoring and Slicing the Squid: Make diagonal scores on the inside of the squid body. This helps it cook up beautifully and become more tender. After scoring, cut it in half and then slice into bite-sized pieces about 1.5cm wide. If scoring is difficult, a julienne peeler can be helpful.

6. Make Green Onion Oil: Heat the cooking oil in a pan over medium-low heat. Add the chopped white parts of the green onion and sauté until fragrant and lightly browned, infusing the oil with delicious green onion flavor.
