A satisfying one-bowl meal that cuts through richness! Introducing a spicy version of the Spam mayo rice bowl, enhanced with gochujang and chili powder.
Ingredients- 1/2 can Spam (approx. 200g)
- 1 Egg
- 1/4 Onion
- 1 Pepper (e.g., Korean green pepper or red pepper)
- 1 Tbsp Minced Garlic
- Mayonnaise, to taste
- Seaweed flakes, a pinch
- 1 bowl of cooked rice
Sauce Ingredients- 1 Tbsp Soy Sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Oligodang (corn syrup) or honey
- 1 tsp Gochujang (Korean chili paste)
- 1 tsp Gochugaru (Korean chili flakes)
- 50ml Water (approx. 1/4 cup)
- 1 Tbsp Soy Sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Oligodang (corn syrup) or honey
- 1 tsp Gochujang (Korean chili paste)
- 1 tsp Gochugaru (Korean chili flakes)
- 50ml Water (approx. 1/4 cup)
Cooking Instructions
Step 1
First, rinse the 1/2 can of Spam under hot water to remove any impurities. Then, dice it into bite-sized cubes, about 1-1.5 cm. (You can use a whole can if you prefer!) Thinly slice the 1/4 onion and finely chop the pepper.
Step 2
Place the diced Spam in a preheated pan and cook over medium heat until golden brown and slightly crispy on all sides. This will render some of the fat and enhance its flavor.
Step 3
In another pan, add a little cooking oil and pour in the lightly beaten egg. Scramble the egg until softly cooked and fluffy.
Step 4
Now, let’s prepare the spicy sauce that will give this dish its kick. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp oligodang, 1 tsp gochujang, and 1 tsp gochugaru. Mix well until smooth.
Step 5
In the same pan used for the Spam (or a clean one with a little oil), add 1 Tbsp minced garlic and the sliced onions. Sauté until the onions become translucent and fragrant.
Step 6
Once the onions are softened, pour the prepared spicy sauce into the pan.
Step 7
Add 50ml of water to the sauce and bring it to a simmer over medium-low heat, stirring occasionally. Let it cook until it thickens slightly to your desired consistency.
Step 8
Once the sauce has thickened to a nice glaze, turn off the heat. Be careful not to overcook it, as it can become too salty.
Step 9
Serve a generous portion of hot cooked rice in a wide bowl. Spoon the spicy onion sauce evenly over the rice, ensuring it covers most of the surface. Arrange the scrambled eggs around the edges of the rice bowl for a visually appealing presentation.
Step 10
Place the golden-brown cooked Spam in the center of the bowl. Drizzle mayonnaise over the top as desired, and finish with a sprinkle of seaweed flakes. Your delicious and vibrant Spicy Spam Mayo Rice Bowl is now ready to enjoy!
