Ingredients

  • Spaghetti 70g
  • Oysters 10 pcs
  • Garlic cloves 2
  • Minced garlic 1/2 Tbsp
  • Scallions 3 stalks

For Boiling Pasta

  • Water 1L
  • Salt 1 Tbsp

Seasoning Sauce

  • Yeondoo (fermented soybean essence) 1 Tbsp
  • Pasta water 1/4 cup
  • Olive oil 3 Tbsp

Cooking Instructions

Step 1

Bring 1L of water to a rolling boil in a large pot. Add 1 Tbsp of salt and cook the spaghetti for approximately 7 minutes, or until al dente. Drain the pasta, reserving about 1/4 cup of the pasta water. The pasta water will be used to create a smooth sauce.

While the pasta is cooking, prepare the oysters. Gently rinse the 10 oysters under cold running water to clean them. Ensure any shell fragments or impurities are removed. Drain them thoroughly and set aside. Washing them beforehand helps streamline the cooking process.

Prepare the aromatics for the pasta. Thinly slice the 2 garlic cloves. Finely chop the 3 scallion stalks; these will be used as a garnish. Having your ingredients prepped makes the cooking process much smoother.

Heat 3 Tbsp of olive oil in a pan over medium heat. Add the sliced garlic and sauté until fragrant, infusing the oil with garlic flavor. Once the garlic begins to turn golden, add the 1/2 Tbsp of minced garlic and stir-fry quickly over low heat, being careful not to burn it, to release its aroma.

Add the prepared oysters to the pan and sear them quickly over high heat until they are just cooked through. Be careful not to overcook, as this can make them tough. Once the oysters are cooked, add the drained spaghetti, the reserved 1/4 cup of pasta water, and 1 Tbsp of Yeondoo. Toss everything together quickly to combine and allow the sauce to coat the pasta.

Once the pasta is well-coated with the sauce and everything is combined, your dish is ready. Transfer the Oyster Yeondoo Pasta to a serving plate. Garnish generously with the chopped scallions. Enjoy this unique and delicious winter pasta dish!
