This is a special side dish I made for my husband, who usually doesn’t eat cucumber chili much. We received a generous amount of fresh cucumber chili grown by my in-laws, so I decided to make this! It’s wonderfully crisp, nutty from the soybean paste, and perfectly seasoned with a hint of sweetness and saltiness, making it an ideal accompaniment to rice. Ingredients- 10 pcs cucumber chili
- 2 Tbsp store-bought soybean paste (Doenjang)
- 1 Tbsp red pepper powder (Gochugaru)
- 1 Tbsp minced garlic
- 2/3 Tbsp sugar
- 1.5 Tbsp oligodang (corn syrup)
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Wash the cucumber chilies thoroughly under running water and trim off the stems. This step ensures cleanliness and improves the texture.
Step 2
Slice the prepared cucumber chilies into bite-sized pieces. Avoid slicing them too thinly, as this can make them mushy; aim for a moderate thickness to maintain their crispness.
Step 3
Now, let’s make the delicious seasoning! In a medium-sized bowl, combine 2 Tbsp of store-bought soybean paste, 1 Tbsp of red pepper powder, 1 Tbsp of minced garlic, 2/3 Tbsp of sugar, 1.5 Tbsp of oligodang, 1 Tbsp of toasted sesame seeds, and 1 Tbsp of sesame oil.
Step 4
Using a spoon, mix all the seasoning ingredients thoroughly until well combined. Stir until the soybean paste is smooth and all ingredients are evenly incorporated. Taste and adjust the seasoning if needed, according to your preference.
Step 5
Place the sliced cucumber chilies in a large bowl. Pour all the prepared soybean paste seasoning over them. Gently mix with a spoon or your hands, ensuring the seasoning coats the chilies evenly. Be careful not to mix too vigorously, as this can bruise the chilies.
Step 6
Transfer the deliciously mixed cucumber chili salad to a nice serving plate. It’s ready to be enjoyed immediately! For an even more refreshing taste, you can chill it in the refrigerator for a short while. Try serving it over rice for a delightful meal.
