Main Ingredients

  • 300g boneless, skinless chicken thighs (you can leave the skin on for extra flavor)
  • 1/2 medium onion, cut into large chunks
  • 1/2 medium carrot, cut into large chunks
  • 4 medium potatoes, cut into large chunks
  • Water (enough to cover the vegetables)

Spicy & Sweet Sauce

  • 1 tablespoon gochujang (Korean chili paste)
  • 4 tablespoons cooking wine (mirin or sake)
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1 tablespoon gochugaru (Korean chili flakes)
  • Salt (to taste)

Cooking Instructions

Step 1

First, wash and peel the potatoes, onion, and carrot. Cut them into large, bite-sized pieces. Cutting them this way helps them hold their shape better during cooking.

Rinse the chicken thighs thoroughly under cold water. Then, cut them into pieces that are easy to eat. You can remove the skin if you prefer, but leaving it on adds extra richness and flavor. I chose to leave the skin on!

Heat a lightly oiled pan over medium heat. Add the large-cut potatoes and stir-fry until their surfaces become slightly translucent. This step is key to preventing the potatoes from breaking apart when you stir them later while braising. (approx. 3-4 minutes)

Add the remaining chopped vegetables (onion, carrot) and the chicken thighs to the pan with the potatoes. Now, it’s time for the delicious sauce! Add 1 heaping tablespoon of gochujang, 4 tablespoons of cooking wine, 3 tablespoons of soy sauce, 1 tablespoon of gochugaru, and 1/2 tablespoon of sugar. Mix everything well to coat the ingredients.

Pour in just enough water to barely cover the vegetables. Too much water can dilute the rich flavor of the dish. Bring the mixture to a boil over high heat, then reduce the heat to medium and let it simmer for about 15 minutes, or until all the ingredients are tender and cooked through. Stir occasionally to ensure the sauce evenly coats everything. Finally, taste and add salt if needed to adjust the seasoning.

Transfer the finished braised chicken thighs to a serving dish. For an extra touch of presentation, you can chop some other vegetables you have in your fridge (like green onions or mushrooms) and sprinkle them on top as a garnish. Enjoy this delicious meal with a side of hot rice!
