  • 1 small can Spam (approx. 200g)
  • 250ml Water

Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Fish Sauce (Anchovy)

Cooking Instructions

Step 1

Start by thinly slicing the onion and spreading it evenly across the bottom of your pot. This will add a natural sweetness as it cooks and prevent the other ingredients from sticking and burning.

Cut the tofu into bite-sized pieces, about 2cm thick, and arrange them attractively on top of the onions. If you’re using a smaller block of tofu, feel free to use the entire block.

Get your small can of Spam (around 200g) ready.

Place the Spam in its can or a plastic bag and slice it into pieces about 1.5cm thick. Feel free to channel any frustration into your chopping – give it a good smash! (Tip: Briefly blanching the Spam in boiling water can remove excess fat, making it taste even cleaner.)

Nestle the sliced Spam pieces in between the tofu pieces. (Tip: For a different flavor profile, you can try a product like ‘Our Farm Deli,’ which is less salty and has a lovely pink hue compared to Spam. It’s not an advertisement, just a personal suggestion!)

Now, let’s make the flavorful sauce. In a small bowl, combine 1 Tbsp Gochujang, 2 Tbsp Gochugaru, 1 Tbsp Sugar, 1 Tbsp minced garlic, and 2 Tbsp fish sauce. Mix them well. (Tip: I was feeling a bit lazy and added the seasonings directly to the pot this time, but it made mixing them with the ingredients a bit tricky later. For a better presentation and even flavor distribution, it’s best to mix the sauce separately beforehand!)
