Crispy Zucchini and Vegetable Fritters

These delightful vegetable fritters are a fantastic way to use up leftover zucchini and other odds and ends from your fridge. Pan-fried with a moderate amount of oil, they achieve a delightful crispness, and can even be enjoyed as savory vegetable pancakes. They’re the perfect comforting treat, especially on a rainy day!
Ingredients- 1/2 medium zucchini
- 1 potato
- 1/4 onion
- 1/8 carrot
- 5 Tbsp tempura flour (or all-purpose flour)
- 100ml water (about 7 Tbsp)
- 4 pinches salt
- 1-2 Korean chili peppers (optional)
Cooking Instructions
Step 1
Prepare your vegetables. First, peel the potato and then thinly julienne it. Cutting it very thinly will help ensure it cooks through evenly during frying.
Step 2
Next, thinly julienne the zucchini, onion, and carrot to about 0.2-0.3 cm thickness. If you’d like a hint of spice, prepare the Korean chili peppers by slicing them in half, removing the seeds, and then julienning them. Adding these will enhance the texture and flavor profile.
Step 3
In a large bowl, combine all the julienned vegetables. Add the 4 pinches of salt to season. Sprinkle in the 5 tablespoons of tempura flour and pour in the 100ml of water (approximately 7 tablespoons). Mix everything together well until all the vegetables are evenly coated with the batter. Be mindful of the batter consistency; it shouldn’t be too runny.
Step 4
Heat a frying pan with a generous amount of cooking oil over medium heat. Scoop spoonfuls of the vegetable mixture into the hot oil, leaving some space between each fritter. Fry them, flipping occasionally, until they are golden brown and crispy on both sides. Ensure they are cooked through.
Step 5
Cooking Tip: I prefer to fry my fritters in a pan with enough oil to come about halfway up the sides of the fritters. If you use less oil, you can achieve a texture closer to a savory vegetable pancake, which is also delicious! Feel free to adjust the oil amount based on your preference.
