Lowering calories with Konjac Tteokbokki. Enjoy a healthier version of this beloved Korean snack without the guilt!
Main Ingredients- Konjac (446g)
- Square fish cakes (146g)
- Onion (124g)
- Cheongyang chili peppers (16g, 1-2 peppers)
- Minced garlic (26g, approx. 5 cloves)
Cooking Instructions
Step 1
Start by preparing the square fish cakes. Cut them into bite-sized pieces. Prepping your ingredients before you begin cooking makes the process much smoother.
Step 2
Cut the konjac into shapes similar to tteokbokki rice cakes. You can cut them into long, noodle-like strips or any shape you prefer to enjoy its unique chewy texture.
Step 3
Prepare the Cheongyang chili peppers for a spicy kick and the garlic for added flavor. Finely chop the chili peppers and mince the garlic. Feel free to adjust the amount of chili peppers if you prefer it spicier.
Step 4
Now, let’s make the tteokbokki sauce! In a bowl, combine red pepper flakes (2 Tbsp), soy sauce (1 Tbsp), sugar/sweetener (1/2 Tbsp), fish sauce (1 Tbsp), plum extract (1 Tbsp), and red pepper paste (Gochujang) (1 Tbsp). Mix well. For a healthier option, you can substitute sugar with stevia or allulose. (Adjust the sauce proportions to your taste.)
Step 5
Heat a little cooking oil in a pan over medium heat. Add the sliced onion and sauté until it begins to soften and turn translucent. The sweetness from the onion will enhance the overall flavor of the tteokbokki. Be mindful of potential oil splatters.
Step 6
Once the onion is slightly softened, add the prepared fish cakes and konjac. Stir-fry for about 1-2 minutes, allowing the ingredients to mingle together.
Step 7
Pour the prepared konjac tteokbokki sauce over the ingredients in the pan. Stir everything together to coat the fish cakes and konjac evenly with the sauce.
Step 8
Konjac tteokbokki cooks much faster than traditional tteokbokki. Continue to cook over medium heat for another 2-3 minutes, or until the sauce has thickened slightly and coats the ingredients beautifully.
Step 9
Finally, add the chopped Cheongyang chili peppers and minced garlic, and stir-fry for another minute. Your delicious and chewy DooriMoon Konjac Tteokbokki is ready! Enjoy the spicy flavor and satisfying chewiness of konjac. ^^
