  • 2kg fresh bean sprouts
  • 2 large green onions (scallions)
  • 150g minced garlic
  • 60 fresh eggs
  • 1.5kg peeled and deveined shrimp
  • 200g oyster sauce
  • 50g salt
  • 50g black pepper
  • A little sesame oil

First, we’ll prepare a soft egg garnish by baking the eggs. Lightly grease an oven pan, pour in the beaten eggs, and bake in a preheated oven at 180°C (350°F) for about 15 minutes, or until set. This baked egg layer will add a wonderful texture and flavor to the dish.

Once the baked egg is done, let it cool slightly, then transfer it to a bowl and crumble it into bite-sized pieces. You can think of it like making a coarse scramble.

Now, let’s start the stir-fry. Heat a generous amount of cooking oil in a large wok or pan over medium heat. Add the minced garlic and sliced green onions, and sauté until fragrant and slightly softened. Be careful not to burn the garlic; you want to release its aroma gently.

Once the garlic and green onions are fragrant, add the prepared shrimp and the crumbled baked egg to the pan. Stir-fry over high heat. Shrimp cook quickly; as soon as they turn pink and opaque, it’s time to move to the next step to avoid overcooking.
