For my family who loves salmon, I’ll share an easy and simple way to make this dish at home. This recipe is perfect for both special occasions and everyday meals, turning simple ingredients into a delightful salmon rice bowl.
Main Ingredients- 250g Fresh Salmon Fillet
- 2 Lemons
- 1 Onion
- 1 Korean Green Chili Pepper (add more if you like it spicy)
Savory Soy Marinade- 1 cup Water (200ml)
- 1 cup Soy Sauce (200ml)
- 1 Tbsp Mirin (or Rice Wine)
- 2 Tbsp Sugar (adjust sweetness to your preference)

Cooking Instructions
Step 1
First, thinly slice the onion. To mellow its sharpness and retain a crisp texture, soak the slices in cold water for about 15 minutes. It’s even better if you change the water once during soaking.
Step 2
Gently rinse the fresh salmon fillet under running water and pat it thoroughly dry with paper towels. (Remove any scales or skin if present.) Thinly slice the lemons, and diagonally slice the Korean green chili peppers, removing the seeds. (Leave the seeds in if you prefer more heat.)
Step 3
In a saucepan, combine 1 cup of water (200ml), 1 cup of soy sauce (200ml), 1 tablespoon of mirin, and 2 tablespoons of sugar. Bring to a boil over medium heat. Once the sugar has dissolved and the mixture begins to simmer, continue to boil for 10 more minutes to allow the flavors to meld. Let the cooked soy marinade cool completely.
Step 4
Prepare an airtight container of a suitable size. Arrange the prepared salmon fillets snugly at the very bottom, ensuring there are no gaps. Laying the salmon flat without overlapping helps the marinade penetrate evenly.
Step 5
Layer the drained onion slices over the salmon. Next, add the lemon slices, followed by the sliced Korean green chili peppers arranged attractively. Layering the ingredients makes the dish visually appealing.
Step 6
Pour the completely cooled soy marinade over the layered ingredients, ensuring they are fully submerged. The marinade needs to cover everything for the salmon to cure evenly. Securely close the lid of the container.

Place the sealed container in the refrigerator and let it marinate for at least 8 hours. Marinating overnight will deepen the flavors and enhance the salmon’s richness. For even better results, you can gently flip the container’s contents once during the marinating time.
