Ingredients- 1 pack fresh Shiitake mushrooms
- 1/2 Red bell pepper
- 1/2 Yellow bell pepper
- 1/4 Scallion (green onion)
- 2 Tbsp Olive oil
- 1 Tbsp Oyster sauce
- A pinch of Toasted sesame seeds
Cooking Instructions
Step 1
First, thoroughly wash the shiitake mushrooms under running water. Trim off the tough stem ends, then thinly slice the mushroom caps to about 0.5 cm thickness. Prepare the bell peppers by removing the seeds and core, washing them, and then slicing them into strips similar in length to the mushroom slices. Using both red and yellow bell peppers will create a more vibrant and appetizing dish. Finely chop the scallion and set aside.
Step 2
Heat 2 tablespoons of olive oil in a pan over medium-high heat. Add the sliced bell peppers and stir-fry briefly until they are slightly tender-crisp, retaining some of their crunch. Then, add the prepared shiitake mushrooms to the pan and continue to stir-fry until the mushrooms soften and become tender.
Step 3
Once the mushrooms and bell peppers are well-stir-fried, add 1 tablespoon of oyster sauce. Stir everything together to ensure the oyster sauce evenly coats all the ingredients. The oyster sauce will enhance the savory flavor of the shiitake mushrooms.

Finally, add the chopped scallions to the pan. Stir-fry quickly over high heat for about 30 seconds to a minute, just until the scallions are fragrant. The key here is to cook quickly to prevent the mushrooms from releasing too much liquid and becoming soggy.
