After a full day of making napa cabbage kimchi, fresh kimchi, and young napa cabbage kimchi, I quickly whipped up this ‘Tofu and Radish Stew with Fermented Shrimp’ while the pork was boiling. This stew is wonderfully light and clear, seasoned solely with fermented shrimp (saeujeot). It’s a perfect accompaniment to bossam (boiled pork) and fresh kimchi, helping to cut through any richness and cleanse the palate. It’s incredibly simple to make, and if you prefer a touch of spice, you can add a sprinkle of red pepper flakes just before serving for an even more delicious experience.
Ingredients- Radish (about 50cm long) 1 section
- Tofu 1 block
- Minced garlic 1 tsp
- Chopped green onion 1 Tbsp
- Korean chili peppers (cheongyang) 3
- Fermented shrimp (saeujeot) 2 Tbsp
- Natural seasoning seafood broth 750ml
- Sesame oil 1 Tbsp
Cooking Instructions
Step 1
First, wash the radish thoroughly and slice it thinly into half-moon shapes, then cut each half-moon into about 6 pieces. Place the sliced radish in a pot with 1 tablespoon of sesame oil and sauté over medium-low heat until the radish becomes translucent. This step helps to extract the radish’s natural sweetness, deepening the stew’s flavor.
Step 2
Once the radish is lightly sautéed, pour in the prepared 750ml of seafood broth and bring it to a boil. As the broth starts to bubble, add the chopped green onion, diagonally sliced Korean chili peppers, and 1 teaspoon of minced garlic to infuse aromatic flavors.
Step 3
When the stew comes to a rolling boil, gently add the 1 block of tofu, cut into bite-sized pieces. Season with 2 tablespoons of fermented shrimp (saeujeot). Continue to boil vigorously. Once it boils again, taste the broth. If it needs more seasoning, add a tiny pinch of salt to adjust the final taste.
