  • 2 stalks Young green garlic (finely chopped after preparation)

Seasoning Ingredients

  • 1 Tbsp Soy sauce
  • 1 Tbsp Plum extract (Maesil extract)
  • 1 Tbsp Ginger syrup
  • 1/2 Tbsp Oligosaccharide
  • 1/3 Tbsp Sesame oil

Cooking Instructions

The low-sodium anchovies for stir-frying are already well-dried, so there’s no need to dry them further by pan-frying. Place all the anchovies in a wide pan.

I picked up some fresh young green garlic from the market. Wash the young garlic thoroughly, trim off the root ends, and finely chop them into about 0.5cm pieces, including the tender green parts.

Stir the anchovies in the pan with a spatula or spoon, just to lightly toast them and prevent sticking.

Since low-sodium anchovies have very little salt, they can taste bland. To season the stir-fried anchovies, add 1 tablespoon of soy sauce and mix well with the anchovies. It’s important to do this off the heat to prevent the anchovies from burning.

Now, turn the heat back on to high and stir-fry quickly. It’s crucial to stir-fry rapidly to prevent the anchovies from burning. Next, add 1 tablespoon of plum extract, 1 tablespoon of ginger syrup, and 1/2 tablespoon of oligosaccharide, and quickly mix everything together until well combined. Finally, drizzle 1/3 tablespoon of sesame oil around the edges of the pan to add aroma. Adding sesame oil after turning off the heat will enhance its fragrance.
