Main Ingredients

  • 5 leaves of cabbage (approx. 200-250g), thinly sliced
  • 6 strips of thick-cut bacon, chopped
  • 1 handful of fresh chives (approx. 30g), cut into 1-inch pieces
  • 2 fresh eggs
  • 3 Tbsp all-purpose flour (approx. 30g)
  • Pinch of salt
  • Bonito flakes (for topping) as needed
  • Mayonnaise as needed
  • Tonkatsu sauce as needed
  • Parsley flakes (for garnish, optional) as needed

Cooking Instructions

Step 1

First, slice the cabbage as thinly as possible into shreds. This thin slicing helps achieve a texture that’s both tender and slightly crisp when cooked. Soak the shredded cabbage in cold water for about 10 minutes to enhance its crispness. Drain thoroughly, pressing out excess water. Place the drained cabbage in a large bowl. Add the chopped bacon and chives for color and aroma.

Now, let’s prepare the Okonomiyaki batter. Crack the 2 fresh eggs into the bowl with the cabbage mixture. Add a tiny pinch of salt to season and enhance the flavors. Use chopsticks or a whisk to gently beat the eggs until well combined.

Add the all-purpose flour to the bowl. Be careful not to add too much flour, as it can make the batter stiff. You want just enough flour to bind the ingredients together. I used about 3 tablespoons, mixing gently until the batter holds its shape without being too wet.

Heat a skillet over medium-low heat and add a generous amount of cooking oil. Spoon the cabbage mixture onto the hot skillet, using the back of a spoon or spatula to shape it into a round, thick pancake. Cook for about 5-7 minutes on one side until golden brown and the edges start to set. Prepare to flip when the bottom is nicely browned.

Once the Cabbage Okonomiyaki is beautifully golden brown on both sides, carefully transfer it to a serving plate. While still warm, drizzle mayonnaise in a zig-zag pattern over the top, followed by tonkatsu sauce. Finally, sprinkle a generous amount of bonito flakes. Your delicious Cabbage Okonomiyaki is now ready to be enjoyed! For an extra touch, you can sprinkle some parsley flakes for garnish.
