Cooking Instructions
Step 1
Feel free to use any vegetables you have on hand in your refrigerator or garden for the filling, or choose your favorites! You don’t have to stick to the exact vegetables listed. Bell peppers, cabbage, and perilla leaves (kkaennip) also work wonderfully.
Step 2
Prepare the egg by making a thin omelet. The golden-brown egg omelet not only adds a beautiful color to the rolls but also contributes a soft texture. Once cooled, slice it into thin strips.
Step 3
Gently unwrap the crab sticks and microwave them for about 20-30 seconds. This makes them softer and easier to handle. You can then cut them in half lengthwise for a nicer presentation in the roll.
Step 4
Prepare the chicken breast according to your preference. You can microwave it until cooked and then slice it, or boil it and shred it. If you’re using crab sticks, chicken breast is optional but adds extra protein.
Step 5
Wash and peel the carrot, then cut it into thin matchsticks, about 0.5 cm thick. Thinly shred the red cabbage as well. It’s important to maintain a nice, crisp crunch.
Step 6
Wash the cucumber and cut it into long, thin strips, avoiding the seedy core. You can peel it if you prefer, but leaving the skin on adds color and nutrients. A ‘spoon carving’ technique can help remove the watery seeds.
Step 7
And there you have it – all your ingredients are prepped and ready for delicious rice paper rolls! Doesn’t it look appetizing already?
Step 8
Prepare warm water for softening the rice paper. Fill a wide plate or shallow bowl with plenty of warm water. The water should be comfortably warm to the touch.
Step 9
It’s also a good idea to have some lettuce leaves or perilla leaves ready to place on the rice paper before adding the other fillings. These add an extra layer of freshness and aroma.
Step 10
Dip one sheet of rice paper into the warm water for about 5-10 seconds, turning it once. Be careful not to soak it for too long, as it can become too soft and tear easily. Lightly shake off any excess water and lay it flat on your work surface.
Step 11
Place a perilla leaf or lettuce leaf on the softened rice paper. Then, arrange your prepared fillings – crab sticks, chicken breast, egg strips, carrot, cucumber, and red cabbage – neatly on top. Carefully fold in the sides of the rice paper and then roll it up tightly from the bottom. Your fresh rice paper rolls are now complete!
Step 12
The chewy texture of the rice paper in these finished rolls is truly wonderful. Enjoy them with your favorite dipping sauces, such as peanut sauce or hot chili sauce, alongside the crisp vegetables!
