Main Ingredients

  • 200g Cabbage
  • 1/2 Cucumber
  • 1/4 Red Bell Pepper
  • 1/4 Green Bell Pepper

First, wash the cabbage thoroughly and cut it into bite-sized squares, about 2cm in size. Set aside.

Wash the cucumber, trim off the ends, and slice it into rounds about 0.5cm thick. If the cucumber has many seeds, you can scoop them out slightly before slicing.

Remove the seeds from the red bell pepper, wash it well, and then cut it into squares approximately 2cm, similar in size to the cabbage, to add a vibrant color.

Similarly, remove the seeds from the green bell pepper, wash it clean, and cut it into about 2cm squares. Prepare it for the pickles.

Place all the prepared vegetables – cabbage, cucumber, red bell pepper, and green bell pepper – into a large bowl. Add the whole peppercorns and bay leaves for extra flavor, and gently mix to ensure they are evenly distributed among the vegetables.

To make the pickling brine, combine 100g of granulated sugar, 100ml of vinegar, and 120ml of water in a separate bowl. Stir well until the sugar is completely dissolved. No cooking is required; simply stir until dissolved.

Carefully pack the prepared vegetables into a sterilized glass jar or an airtight container. Pour the pickling brine over the vegetables, ensuring they are fully submerged. Seal the container tightly and store it in the refrigerator. While you can enjoy them immediately, the flavors will meld and deepen beautifully after about a day in the fridge.
