Cooking Instructions
Step 1
Begin by preparing the flounder. Use a knife to carefully scrape off the scales from both sides of the fish. Rinse it thoroughly under running water, then pat it completely dry with paper towels. Ensuring the fish is dry is crucial for achieving a crispy skin.
Step 2
Make a cut down the center of the flounder to separate the flesh from the bones. Carefully debone the fish, keeping the fillets intact. This step makes the fish easier to handle and eat.
Step 3
Trim the crusts off the bread slices. Cut the bread into pieces that match the size of the flounder fillets. You will need two pieces of bread for each fillet, totaling four pieces (discard the crusts).
Step 4
Score the skin side of the flounder fillets with shallow cuts. This helps prevent the skin from curling up as it cooks and allows the seasoning to penetrate better. Season both the flesh and skin sides generously with salt and pepper.
Step 5
Place the bread pieces onto the flesh side of the flounder fillets, ensuring they fit the shape of the fish. Press down firmly with your hands to make sure the bread adheres well to the fish. A good adhesion is key for a cohesive bite.
Step 6
Heat a generous amount of olive oil in a skillet or pot over medium-low heat. Carefully place the breaded flounder fillets into the hot oil, breaded-side down first. Sear until the bread is golden brown and crispy, then flip and cook the other side until equally golden and the fish is cooked through. Adjust the heat as needed to prevent the bread from burning.
Step 7
Now, let’s make the sauce. In a saucepan, combine the heavy cream, cheddar cheese slices, and two pinches of salt. Bring to a simmer over medium heat, stirring occasionally, until the sauce thickens to a pourable consistency (it should fall in thick drips from the spoon). If using, add the lemon zest and finely chopped celery for extra flavor.
Step 8
Pour the warm cream cheese sauce into a serving dish. If desired, sprinkle a little of the finely grated lemon zest over the sauce for a fresh aroma. Place the crispy breaded flounder on top of the sauce. Serve immediately and enjoy this delightful dish!
